Just my own opinion here, but I would probably run with 4GB of memory given your OS of choice and get a more powerful power supply.
1GB of memory just doesn't cut it anymore and 2GB should be your minimum level in this category. I chose 4GB since you are planning on using a 64-bit OS and it can address the higher quantities of RAM.
Corsair makes an excellent PSU, but your 650 watt unit is getting mightly close to the edge of its performance if not going beyond its capabilities. I would probably choose a good 800-900 watt model as a baseline and maybe higher if I had upgrade plans in the future.
You did not mention optical drives in your build. Since you are looking at an X48 based product, make sure to run with SATA drives if possible. Not only are IDE ports slowly being phased out, the use of a SATA drive gives you less headaches since you don't have to mess around with setting jumpers on the drives. Just plug them in and go.
As to your concerns regarding the motherboard and GPU, they will go fine together. I am unsure with your notes above whether you are planning on a single 3870X2 or dual 3870 boards, but either setup will run well since the mainboard is designed to handle the ATI CrossFireX.
