What is virtual private networking? Anyone know where I can find some good reading on it? Thanks.

A VPN is where you use your internet connection to join or run a "network" through the internet connection. You can use a VPN client basically as a secure "tunnel" into a private network. Or you can use the same principles to create a "network" using VPN.

Your best place for information is to go to Google (http://www.google.com) and do a search for Virtual Private Network.

So the 3 home computers behind my linksys router, which share my cable modem IP to access the 'net are considered a VPN?

You're just running a network. But If you used one of these computers to access a network at your workplace. Using some type ov vpn client or something. And throgh your internet connection, that would be a vpn.
