    Looking at Gigabyte's website, the older revision ships with bios F2, which doesn't support the i5 760. I'm wondering if anyone knows if I can boot up with it and then update the BIOS so it will fully support it.

    Amazon doesn't specific revision numbers. So it's very possible I will end up with a revision 1.0, then unable to boot up at all.

    You will just have to try it and see if it works, nothing else you can do.

    I recently put a 875K into a UD6 and that CPU was not supported until F6 or something like that, and it had BIOS F2 and it still run ok - definitely long enough for me to update the BIOS.

    Sometimes it works, sometimes not, all you can do is hope and try it out. If it doesn't boot you will need to borrow a supported older CPU to flash with.
