I just wanted to give an update to my current issue. I was able to determine the UEFI GUI was not corrupt it was just GUI interface for that board. I would like to go on record and say to ASROCK, If you're going to write user manual for a certain setup process within the UEFI make sure they are written for the board specifically. In short, the solution to my problem was to download the RAID driver from ASROCK website. ASRock > X79 Extreme6 "Question (Q&A-89):How do I pre-install the SATA RAID driver on X79 chipset motherboard? (2011/11/1)"

I hope this is helpful for anyone else trying to setup a raid configuration on a x79 Extreme 6 motherboard.
