I think for gaming the 2500(k) is even better than the 2600k, the only difference between those is hyper-threading and the 0.1GHz at stock/boost.
If you plan to OC (I assume you do otherwise you wouldn't go for the k version) you can buy one that compatible with both platforms now.
Realistic OC for the E8400 with good aftermarket air cooler is 33% to 40%.

I also do some heavy photo processing for astrophotography, and I've been told the hyper threading would help with that, no?

It is possible you may be able to use tRD 7, which will lower the latency, and may improve read a bit.

EDIT: As memry performance increase you may need more DRAM Voltage and/or MCH Core.

This is realy software dependant. hyper-threading is effective in muti-threaded environment, if the software use muti-threading for peocessing than yes.

Oh forgot to say.. sorry, but I'm not sure what component you're referring to when you say I can buy one? I'm guessing an aftermarket cooler?

Tes, sorry, aftermarket air cooler, unless you want to go water.

Quick update: 40 minutes of Long FFT yielded max temps of 73C and 71C. Going to now play with the memory using your recommendations.

I get 62.5ns latency with those settings, maybe you didn't let the system idle long enough?
    Still better than before.

See what gain you have in games if any. It's also another stress test, sometimes all Prime95 and IBT test go well just to crash in a game.
