GA-EP45T-UD3P have DDR3(up to 2200 MHz OCed) RAM and supports Crossfire and have 6 SATA, 2 GSATA, 3 FireWire and 12 USB 2.0 ports. Last but no least 2 Realtek 8111C Gigabit Ethernet Adapters. Realtek Audio ALC889A 7.1 with Support for Dolby Home Theater. Does not have integrated video.
G31M-ES2L have DDR2(up to 1600 MHz OCed) RAM and no Crossfire support, 4 SATA and 8 USB 2.0/1.1 ports and single Realtek 8111C Gigabit Ethernet Adapter. Realtek Audio ALC883 7.1 (but for 7.1 you have to use front and back connectors). Haves Integrated video Intel GMA3100.

p.s. IMO P45 one is better have newer chipset, newer audio card and supports newer type of RAM.

Your EP45-UD3P is an excellent board to overclock.
The G31M-ES2L has limited overclocking ability and will not O/C very much.

You can use the forum's Advanced Search feature and use the Search Titles Only option where you search the forum for threads that have EP45-UD3P or G31M-ES2L in the thread title. If you want overclocking help, create a new thread for each board in the Gigabyte forum and be sure to follow this recommendation:

We need detailed information about ALL OF THE HARDWARE in your system.

We can best help you after you create a detailed hardware list in the System Specs
portion of your forum profile at the bottom of the profile page or in your forum signature.
Be sure to include brand names and model numbers.
When you are done editing or creating your hardware list, save the settings.

With two different boards, it will be best if you create the detailed hardware lists in your forum signature, with separate lists for each board.

The quality of your power suply, memory modules, and cpu cooler will either help you overclock further or possibly limit how much you can overclock each system.
