    No where

Well if you could stop it from using the AC'97, what would it use? Logically it would go to the next avaliable card, which in this case is in fact your SB.

Linux ignores the BIOS once the kernel starts loading, so turning something off there has little effect. To stop certain hardware modules from loading you need to add them to /etc/hotplug/blacklist by opening it in a text editor add typing in the name of each offending module (following the existing formatting).
99% of linux configuration is done in text editors, you should get in the habit of making a copy of a working config file before you edit it, and if something goes pear shaped all you have to do is copy the backup back to the original location (overwriting the borked config file) to get bact to where you were, some people go to the extent of keeping a seperate backup of their entire /etc directory.
To set up both wheels on your mouse have a look at the ZAxisMapping option in your /etc/X11/Xf86Config-4 file (aother text config file :-)
