yeah right click on the folders and remove those users u don't wan't to have access - also make em users not power users and then they won't be able to touch windows etc.
be careful thou if u restrict them too much 2 things will happen
1. they get annoyed at you
2. programes may not run since they can't access the folders they need to (and registry)
Any "sensitive" data should be transferred to a laptop, and then discreetly left in the backseat of a taxi.

firstly you have to goto Tools->Folder Options->View-> and untick simple file sharing
this allows you to see the security tab
secxond the drive u want to restrict access to must be NTFS as FAT based drives just aren't made with the intention of being secure.
then you right click a folder with "sensitive" information in it, and goto security and remove "everyone" (if there) and any users you do not want to be able to access it, making sure yourself and administrator remain in the list (just using the administrators group may be easier for this purpose, provided you demoted the default XP level admin privelages for new users)
